Very simple. Basic ingredients.  And yet a sophisticated flair and style all unto its own.  I had roasted some tomatoes which was an incredible experience. I’m not a huge tomato fan but there are times it is just the perfect condiment. And there are certainly cultures that thrive on it as a central ingredient. See the recipe HERE for roasted tomatoes as they are a brilliant addition.

Here are your ingredients

  • 2-3 Eggs
  • Mushrooms
  • Salami
  • Basil Leaves
  • Spinach Leaves
  • White hard cheese
  • 1/2 Potato
  • 1/2 onion
  • Roasted Tomato
  • Salt and Pepper (red pepper flakes for spice)

In a small oven-proof frying pan. Oil or butter the pan and mushrooms, onions, salami. Allow to saute till mushrooms wilted, onions sweated and salami rendered. Add greens, tomatoes and then eggs, either 2 yolks or one yolk for 3 eggs scrambled.

image Let bottom brown and then place pan in oven to heat thru and brown on top, about 10 minutes.
