Light on Olive oil Basil Pesto

Lemon Basil Pesto


A friend of mine wanted me to make a pesto with less olive oil, traditional Pesto is made with a good helping of olive oil (see an Italian Grandmother’s recipe, my typical type recipe), but here is a version she claims is the best she’s ever had. Enjoy!

  • 1 cup fresh basil leaves IM000004
  • 1/2 cup Pine Nuts
  • Juice of 1 Lemon
  • 1 clove garlic plus 1 teaspoon garlic powder
  • 1 Tablespoon Grapeseed Oil
  • 1tsp to 1 TBSP Extra Virgin Olive Oil
  • 2 TBSP to 1/4 cup shredded Parmesan Cheese
  • Salt and Pepper
  • Dash Tapetio pepper

I use a submersion blender or in your food processor mix all of the ingredients till smooth. ingredients are estimates, so salt, lemon, pepper, cheese it up to taste! Grill your choice of bread, chicken, pasta or add mayonnaise and spread on your favorite sandwich, enjoy!
